Die irische Whiskey-Destillation begann im 11. Jahrhundert, als irische Mönche nach ihrer Rückkehr aus dem Mittelmeerraum die Kunst der Parfüm-Destillation nach Irland brachten. Aus dieser entwickelte sich im Laufe des 12. Jahrhunderts die irische Whiskey-Destillation.

Bis auf einige Ausnahmen wird der irische Pot Still Whiskey in einem dreistufigen Verfahren hergestellt, wohingegen schottischer Whisky nur zweifach destilliert wird.
Ein weiterer Unterschied liegt darin, dass schottische Produzenten gewöhnlich während des Mälzens Torf verwenden, was in Irland nur selten der Fall ist. Den Unterschied merkt man im Geschmack: schottischer Whisky schmeckt erdig und rauchig, irischer dagegen hat einen sehr milden Abgang. Eine Ausnahme bildet der Whiskey von der Cooley Destillerie, der sowohl „peated“ als auch zweifach destilliert ist.

Der irische Destillationsvorgang kann sehr verschiedene Arten von Spirituosen hervorbringen. Diese unterscheiden sich zwar in ihrem Charakter und Geschmack, unterliegen aber allesamt der legalen Definition irischen Whiskeys, die besagt, dass sowohl die Destillation als auch die Reifung in Irland stattfinden muss. Des weiteren schreibt die Definition auch die Hauptbestandteile und den maximalen Alkoholgehalt vor. Zu guter Letzt muss irischer Whiskey für mindestens drei Jahre in Holzfässern gelagert werden.

Dass die Nachfrage nach irischem Whiskey hoch ist, wird auch bestätigt durch die Existenz der seit 1608 produzierenden Bushmills Destillerie. Doch obwohl Whiskey heutzutage die beliebteste Spirituose der Welt ist, gab es Ende des 19. Jahrhunderts einen Rückgang in der Produktion irischen Whiskeys. Im frühen 20. Jahrhundert stieg die Nachfrage allerdings wieder an, bedingt insbesondere durch die amerikanische Prohibition und die damit verbundene Nachfrage aus den U.S.A. und den irischen Unabhängigkeitskrieg.

In jüngerer Zeit erlebt der irische Whiskey wieder eine Renaissance. Der Markt vergrößert sich, auch dank bekannter Whiskeymarken wie Jameson’s, und die traditionellen Destillerien (Bushmills, Midleton und Cooley) arbeiten mit erhöhten Kapazitäten.

Irish Single Malt Whiskey

BUSHMILLS Single Malt

Triple distilled from 100% malted barley and matured for a minimum of 10 years mainly in Bourbon-seasoned barrels, it has aromas of honey, vanilla and milk chocolate. Malted barley is dried in a closed kiln without peat resulting in a clean, unsmoky taste.

The whiskey takes it name from the Battle of Clontarf in 1014. Refined vanilla, caramel, dust, toasty wood and delicate spice flavours. A slight sweet palate with toffee, roasted nuts, wet hay, and brown spices. Finishes with a long, sweet caramel, wood, and spice fade.
